I have a soft spot for oozes. From the common Green Slime to the exotic Gelatinous Cube, each has traits and quirks that set it apart. The following new types of Ooze should prove to be both simple and memorable. Providing not just a combat challenge to the players, but also a problem to be resolved.
Oozes are creatures of primal instinct, they do not plan or play games, and regard the world basically as food or not food. The more advanced Ooze may add some distinction though, such as dangerous food, or area unlikely to have any food. It would take a genius of an Ooze to come up with concept of food that should not be eaten because it can get me more food.

However, the Delicious Pink Slime is one of the most intelligent types you are likely to find.
Although it is strictly a carrion eater (like most of it's kind), the Delicious Pink Slime has developed a cunning method of increasing the chances of more dead things showing up for it to forage. It does this by finding something dangerous, and spraying it with a substance that smells absolutely yummy to a wide range of different creatures. Of course, the average player character is one of the most dangerous creatures the Delicious Pink Slime is ever likely to come across, so of course they will be the ideal targets for a good squirting.

I leave it up to the nefarious mind of the reader to imagine the chaos which ensues, when a player character is suddenly the most mouth or maw watering dish on the menu for a hundred square miles.
